The Lab - A Never Ending WIP
At AMA's R&D department, we like to think of our botanical infusions as blank canvases; chemical matrices waiting to be transformed by our own microbiology. We're constantly amazed when a non-volatile compound encounters the right enzyme and suddenly becomes part of the aromatic bouquet of the final product. It fascinates us to observe this evolution: from the infusion all the way to the bottle.
To make this possible, we rely on a team of 16 Pioreactors. These small open-source bioreactors allow us to study our substrate in depth, anticipate fermentation issues, carry out precise micro-fermentations, and, above all, learn and imagine new flavors.
To understand technology as the study and application of craftsmanship, a natural evolution of the arts of the past, sketching the path toward the future.
