White Tips & Green Tea

Naturally fermented, using exclusive techniques inspired in the ancestral pétillant naturel method, we use the finest terroir / specialty teas and herbs sourced from small-scale family farms and pure spring water from the Basque country. Drink it chilled, 9–11° in a wine glass. As an aperitif, at the table, in a glass, redefining what it means to share joyful special moments and drink well.

Tasting notes

Pale straw with gentle, persistent bubbles. Aromas of pear, violet, and papaya blend with soft bubblegum and white tea.

Origin

Chinese White Tips tea, Cui Min.

Palate

Floral sweetness, candied fruit, and vibrant acidity.

Serve

Serve in a white wine glass between 11–13°C to bring out its character and freshness. Handle and open gently to preserve bubbles.

Origin

Organically grown on the remote Qingshan peninsula in Hunan, Cui Min [White Tips] is cultivated at 750 metres above sea level on a protected, mountainous island accessible only by boat. The 141-hectare plantation is certified organic and supported by a close-knit local community, with around 85 people working in tea cultivation and processing. Qingshan follows Fairbiotea guidelines and uses sustainable practices including composting, livestock-based fertilisation, and on-site soil management. The project also supports local education and infrastructure, reflecting a long-term commitment to both the land and the people who cultivate it.
